Apple Quesadillas

The Good Cook posted a recipe for apple egg rolls yesterday. We people who must cook for small numbers on occasion have to stick together! I am intimidated by egg roll wrappers, but I am not by tortillas. So, here's my version of an apple pie for one. Or two. Depending on whether or not you share. I shredded an apple and sprinkled it with cinnamon and brown sugar with a splash of lemon juice. Used the last tortilla I had. These are my favorite low carb tortillas. They actually crisp up when cooked, unlike other low carb choices.
Butter. I must use butter.
And here it is. Tortilla, encasing the lovely apple mixture. Flipped it a couple times until it browned. I like it crispy.
Then I cut it into four pieces and took two upstairs to Gay Boyfriend. He was impressed and wanted more. Too bad for him, eh?
This is my answer to apple pie. I realize that my photography is dismal. Did I mention the lack of light in Tiny Apartment lately? They would have been lovely with ice cream, but I'm kind of not a sweet eater so I don't keep things like that on hand. I wish I would have had a sharp cheddar to shred in there as well. Just to see. People do that you know. Put cheddar cheese on their apple pie. I've never tried it. Next time. Always next time.
In other news, my ankle seems to be better? I am going to attempt to run tomorrow night with the ladies. Wish me luck!

Holy YUM. That looks really good. How clever are you to come up with that?!

My daughter (who is 31 and is single) always talks about how much work it is to eat healthfully and cook for ONE without getting sick and tired of eating the same things over and over again.

I make apple quesadillas for snacks all the time - just sliced apples and shredded cheddar cheese in a tortilla. Delish!

This sounds delicious. Seriously delicious. I don't think it needs ice cream, and in fact think sharp cheddar would be lovely. Yum.

WOW! Yummy! I do recommend the cheddar/apple pie experience. It's one of the few things I remember learning in my 7th grade Home Economics class.
