I had a really funny blog post for you, but the blogging gods ate it. Maybe tomorrow, I'll recreate it. In the meantime, all you non-foodies might just want to click through. Yesterday, I told you what my lunches would consist of this week. Tonight, I'm going to show you what my dinner is to be. I always start with a recipe, and then I just go my own way.
Chipotle Black Bean Burritos
Adapted from Cooking Light (I seriously know where this one came from!)
1 T. canola oil (I used olive oil)
1 garlic clove, minced
1/2 teaspoon chipotle chili powder
1/4 t. salt
1/3 cup water
1 (15 ounce) can black beans, drained
1 (15 ounce) can kidney beans, drained
3 T. refrigerated salsa
6 - 10 inch reduced-fat flour tortillas ( I used whole wheat low-carb.)
1 cup pre-shredded Mexican cheese blend
1 1/2 cups chopped plum tomatoes ( I used cherry. It's all I could find.)
1 1/2 cups chopped romaine
6 T. thinly sliced green onions (Ooops. I forgot this part.)
6 T. light sour cream
Heat oil in large skillet. Add garlic and cook one minute. Stir in chili powder and salt; cook 30 seconds, stirring constantly. Stir in 1/3 cup water and beans, bring to a boil. Reduce heat and simmer 10 minutes. Remove from heat; stir in salsa. Partially mash bean mixture with a fork. Warm tortillas. Spoon about 1/3 cup bean mixture into center. Top each serving with about 2 1/2 T. cheese, 1/4 cup tomato, 1/4 cup lettuce, 1 T onions and 1 T sour cream. Roll up. Makes 6 servings.
Well. I made the beans, shredded the lettuce, chopped up some pretty tasteless tomatoes, forgot the onions and it was awesome nonetheless, but tonight, I added something special. I roasted some vegetables to go along with it.
Yellow peppers, asparagus and tomatoes! Doused with a bit of olive oil, balsamic vinegar, salt and pepper. I marinated them while the grill heated up. (Gay Boyfriend had to start it again. I don't know why I'm so afraid of it.)

If anything happens at Therapy Tuesday, I'll let you know, but until then, enjoy my cooking. It's kind of therapeutic in it's own way.

I made this last night, K8! I loved it! I used a real chipotle pepper and I grilled some peppers, onion, and tomato to put on top. It was totally awsome! I'm making that lasagna next.
